Homemade Peanut Butter Cups

Wanna wow your relatives at Thanksgiving this year?  Make them some homemade peanut butter cups to take home!

These are SO good….and so simple to make.  They look impressive but don’t take much time.  Perfect for that last minute holiday treat!

Ingredients
4 cups of chocolate chips
1 cup peanut butter
1/2 cup powdered sugar
1 tsp. vanilla extract

Directions
Melt your chocolate chips, either in the microwave or in a double boiler.  Make sure the chocolate is completely melted and smooth, but be careful not to burn it!

Line a muffin tin with muffin liners.  Put a small spoonful of chocolate in the middle of each liner, than swirl it around so it completely coats the sides of the liner.   This is how you make the chocolate shell.  Once each liner is done, place the entire tin in the fridge to set for 20-30 minutes.

In the meantime, work on the next step- peanut butter!  In a medium sized bowl,  combine the peanut butter and powdered sugar until smooth.  Then mix in the vanilla extract.

Take your muffin tin out of the fridge.  Fill each chocolate cup about halfway full with the peanut butter mixture.   Push the mixture down so it lies flat, then top off with a spoonful of your melted chocolate (you may have to reheat it if it’s hardened).  Spread the chocolate around so it seals off the edges and no peanut butter is visible. 

That’s it!  Once you’re done, just pop those bad boys back in the fridge to set.  And prepare your taste buds for a smooth delicious blend of chocolate and peanut butter.  These cups are SO good!

Easy Banana Bread

If you’re like me, you have some overripe bananas lying around the kitchen.  What can I say?  Those things ripen faster than I can eat them!  The good news is, you can use them to make banana bread.  In less than 15 minutes you can have a loaf in the oven….

Easy Banana Bread

Ingredients
2-3 very ripe bananas
1/2 stick of butter (softened)
2 eggs
2/3 cup sugar
1 1/3 cup flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon cinnamon

Directions
Preheat the oven to 350 degrees.

In a medium sized bowl, mash the bananas.  You want to mash them as much as possible so there are no big chunks in your bread.  Add the butter, sugar, and eggs and mix everything together.

In another bowl, combine the flour, salt, baking soda, baking powder, and cinnamon.  Add this mixture to the wet ingredients and stir until everything is combined. 

Pour the dough into a greased pan and bake until a toothpick inserted into the center comes out clean, 30-50 minutes.

This bread is so delicious…I especially like to eat it for breakfast with a little butter.  It’s pretty much heaven!
